The feature to ""unsubscribe contact after last step"" in a Sequence will take the contact off the Sequence once the very last step has fired. This is beneficial for funnels where someone might repeat the process at a later date. Unsubscribing after last step also keeps the stats clean and accurate.

There will be instances that you will not want to use this feature though, such as an original Welcome Sequence to your list. You would not want them to get this email every time that they fill out a form. However, you will want the Sequence on every lead form because you don't know which one they would opt-in from.
