You can find the answer to this question and so many more in a given contact's automation logs. You can read about the extent of what's included in our Knowledge Base here.
To access a contact's automation logs, click on that contact from the main contacts collection. Once you are in that specific contact, click on "Contact History" and scroll down to "Automation Logs." It will look something like this:
You'll note that the description shows you the exact change that was made. If the contact has been around for a long time, you may need to use the search bar. Type in the name of the field you're wondering about and all relevant logs on that field will show.
The automation logs make it easy for you to view a contact's entire history in one place!
